Slow-Cooker Potato and Canadian Bacon Soup - another WW gem

One of my strategies for staying on weight watchers this holiday weekend is making sure I have plenty of healthy options on hand at the house. I decided to make up a double batch of this soup after seeing the recipe at my weight watchers meeting earlier today. This smelled so good as it cooked, and it's perfect for keeping me on track and warming up during this chilly holiday weekend.

Slow-Cooker Chili Chicken Tacos

I have two things to say about this recipe - yum and easy! This was probably one of the easiest dinners I've made in a while, and it had amazing flavor. I actually made mine as a salad, and it didn't need any dressing because the chicken had so much flavor. I probably should have cooked it a little more to make it more tender and easier to shred, but it was good regardless.

Slow-Cooker Mexican Chicken

Recipe
I threw this in the crock pot earlier today so we'd have it for dinner tonight and a few lunches this week. It's so good, and it's really easy. The recipe doesn't call for a green bell pepper, but I had one in the fridge that was gonna go bad so I figured I'd use it. It's cooking now, so no finished pics until later.

And here's it all with the salsa. You don't want it soupy but you do want a good covering on all the ingredients.
